teriyaki beef rice burger

These beef rice burgers are inspired by a Japanese fast-food chain MOS Burger. Some of their classic burgers use rice as the buns instead of bread.

When making the rice buns, I would recommend you to use short-grain white rice (sushi rice), as they are starchy and stickier, making it easier to compress them into buns (similar to making onigiri). If you want to make this vegan, you can also substitute the meat with oyster mushrooms or tofu.

Ingredients

  • 100g beef slices

  • 4-6 gem lettuce leaves

  • 1 cup short-grain rice

  • 1 tbsp black sesame seeds (optional)

  • drizzle of sesame oil

  • toasted white sesame seeds

  • teriyaki sauce:
  • 3 tbsp soy sauce

  • 3 tbsp mirin

  • 3 tbsp sake

  • 1.5 tbsp sugar

Directions

  • make the rice buns:
  • Boil 1 cup of rice, mix in black sesame seeds (optional), and let it cool down completely.
  • Line a small bowl with cling wrap and add 1/4 of the rice. Using the back of a spoon, press down the rice and shape into a patty. Repeat with remaining rice.
  • Coat a frying pan with some sesame oil and lightly toast the rice buns on both sides. Brush one side of the buns with soy sauce.
  • make the teriyaki sauce:
  • Add all the ingredients to a saucepan and bring mixture to a boil over medium heat and keep stirring until the sauce has thickened.
  • cook the beef:
  • Cut beef into thin slices (freeze the meat for 30 mins so it’s easier to cut).
  • Saute the beef and add the teriyaki sauce when it’s almost cooked.
