Spicy Sichuan Poached Chicken

This recipe is similar to my Sichuan mouth-watering chicken recipe, kou shui ji (口水雞), except with fewer ingredients and kind of a short-cut way.

ingredients:

This recipe serves 2 people!

  • 3 chicken thighs (or drumsticks)
  • 3 slices ginger
  • 1 green onion

Mala sauce:

  • 2 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp chilli oil
  • 1 tbsp black vinegar
  • 1/2 tbsp oyster sauce
  • 3 tsp sugar
  • 2 tsp Sichuan peppercorn oil
  • 1/2 cup chicken stock
  • 1/2 tsp salt

Toppings:

  • Toasted sesame seeds
  • Chopped green onion

steps:

  1. In a pot of cold water, add chicken thighs, sliced ginger and green onions.
  2. Bring the water to a boil, then reduce heat to low, and simmer for 6-8 minutes. Turn off the heat, with the lid covered, let the chicken sit in residual heat for 15 minutes.
  3. Dunk the chicken in ice water, then use your hands to shred (or slice with knife). Place the chicken on a serving plate.
  4. In a bowl, combine mala sauce ingredients, then drizzle on top of the chicken. Garnish with chopped green onions and sesame seeds. Serve with rice or noodles, enjoy!
