This recipe is similar to my Sichuan mouth-watering chicken recipe, kou shui ji (口水雞), except with fewer ingredients and kind of a short-cut way.
ingredients:
This recipe serves 2 people!
- 3 chicken thighs (or drumsticks)
- 3 slices ginger
- 1 green onion
Mala sauce:
- 2 tbsp light soy sauce
- 1 tbsp sesame oil
- 1 tbsp chilli oil
- 1 tbsp black vinegar
- 1/2 tbsp oyster sauce
- 3 tsp sugar
- 2 tsp Sichuan peppercorn oil
- 1/2 cup chicken stock
- 1/2 tsp salt
Toppings:
- Toasted sesame seeds
- Chopped green onion
steps:
- In a pot of cold water, add chicken thighs, sliced ginger and green onions.
- Bring the water to a boil, then reduce heat to low, and simmer for 6-8 minutes. Turn off the heat, with the lid covered, let the chicken sit in residual heat for 15 minutes.
- Dunk the chicken in ice water, then use your hands to shred (or slice with knife). Place the chicken on a serving plate.
- In a bowl, combine mala sauce ingredients, then drizzle on top of the chicken. Garnish with chopped green onions and sesame seeds. Serve with rice or noodles, enjoy!
