If you love salmon sashimi and raw fish in general, you might want to try soy sauce marinated raw salmon. Marinating the salmon in soy sauce overnight adds a rich depth of flavour and umami to the fish, and also creates a buttery texture.
ingredients:
- 500g sashimi grade salmon
- 1/2 cup light soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1 cup water
- 1/2 onion
- 1 green onion
- 2 chilli
- 3 garlic
in the marinade container:
- 1/2 onion, sliced
- 2 chilli pepper, sliced
- 1/2 lemon, sliced
serve with:
- white rice
- chopped green onions
steps to making soy sauce marinated raw salmon:
- In a small saucepan, add soy sauce, mirin, sugar, water, onion, green onions, chilli, garlic and water. Bring to a boil for 2-3 minutes. Set aside and let it cool down completely.
- In an airtight container, add a layer of sliced onion, followed by sliced raw sashimi-grade salmon, lemon slices and chilli pepper. Add the soy sauce marinade, making sure it completely covers the salmon. Refrigerate and let it marinate overnight.
- Serve salmon on a bed of white rice with chilli peppers, onions, salmon roe, or whatever you like!
tips:
- Make sure to let the soy sauce marinade cool down completely before pouring it together with the raw salmon! Even a warm sauce can cook the salmon, and we don’t want that.
- If you want to reuse the marinade sauce, you can boil it again and use it for up to a week.
