This classic dish is a staple in many Cantonese homes and holds a special place in my heart—it’s the kind of meal I grew up eating, with tender chicken wings simmered in a savoury-sweet soy sauce blend. The rich, aromatic sauce is perfect for spooning over fluffy steamed rice. It’s so simple, yet so delicious!

  1. Heat a pan over medium heat and add ginger, garlic, cinnamon stick, and star anise. Sauté until fragrant.
  2. Add the chicken wings to the pan and cook until both sides are golden brown.
  3. Pour in the Shaoxing wine, light soy sauce, dark soy sauce, rock sugar, and water, ensuring that the liquid covers half of the chicken wings.
  4. Cover the pan with a lid and simmer over low to medium heat for 6-8 minutes. Flip the chicken wings halfway through the cooking process.
  5. After 6-8 minutes, remove the lid and continue cooking the chicken wings for an additional 3-5 minutes, or until the sauce has reduced and thickened to your desired consistency.
  6. Garnish with chopped green onions and serve with steamed rice. Enjoy!
