This classic dish is a staple in many Cantonese homes and holds a special place in my heart—it’s the kind of meal I grew up eating, with tender chicken wings simmered in a savoury-sweet soy sauce blend. The rich, aromatic sauce is perfect for spooning over fluffy steamed rice. It’s so simple, yet so delicious!
ingredients for soy sauce chicken wings:
- 500g chicken wings
- 3 slices ginger
- 2 garlic cloves
- 2 tbsp light soy sauce
- 1 tbsp Shaoxing cooking wine
- 1 tbsp dark soy sauce
- 8g rock sugar (or 1 tbsp sugar)
- 1 bay leaf
- 1 cinnamon stick
- 2 star anise
- 1 cup water
- 1 green onion, chopped (garnish)
steps:
- Heat a pan over medium heat and add ginger, garlic, cinnamon stick, and star anise. Sauté until fragrant.
- Add the chicken wings to the pan and cook until both sides are golden brown.
- Pour in the Shaoxing wine, light soy sauce, dark soy sauce, rock sugar, and water, ensuring that the liquid covers half of the chicken wings.
- Cover the pan with a lid and simmer over low to medium heat for 6-8 minutes. Flip the chicken wings halfway through the cooking process.
- After 6-8 minutes, remove the lid and continue cooking the chicken wings for an additional 3-5 minutes, or until the sauce has reduced and thickened to your desired consistency.
- Garnish with chopped green onions and serve with steamed rice. Enjoy!
