It’s almost September now, so say hello to cold and gloomy UK! ? It seems like everyone has been getting sick this month, and there’s no doubt that I hopped on that trend too.
Since it’s also pumpkin season, I decide to make a comforting pumpkin pork rib soup (南瓜排骨湯) ? All you need are 5 ingredients for this recipe (pork ribs, tomatoes, carrots, pumpkin and ginger), and all of these ingredients are accessible in any supermarket. You can add other vegetables you like as well.
I love using a pressure cooker to make soups because 1. It cuts down cooking time significantly, and 2. The high pressure creates a more concentrated flavour for the soup.
However, if you don’t have a pressure cooker, simply do the exact same steps with a regular large pot. Once everything is in the pot, cover the pot and let it simmer for 1 to 1.5 hours, or until the pork and pumpkin are tender.
ingredients (serves 4):
- 500g Pork ribs
- 4 tomatoes
- 2 carrots
- 1 small pumpkin
- 5 ginger slices
- 1.5L hot water
- 1 tsp salt
steps:
- Prepare your vegetables by chopping carrots, tomatoes and pumpkin into large chunks.
- In a pot, boil your pork ribs for 3-4 minutes to remove the scum and foam. Drain the water and set the pork ribs aside.
- Using the sauté function of your pressure cooker, sauté ginger slices for 1-2 minutes until golden and fragrant. Then add the pork ribs and brown all sides for 2-3 minutes.
- Add the chopped pumpkin, carrots, tomatoes, hot water and salt. Pressure cook for 25 minutes, then let the cooker to naturally release.
- Once cooked, taste the soup and add salt according to your taste.
tips:
- Pumpkin skin – You don’t need to peel off the pumpkin skin because the pressure cooker will soften it as it cooks.
