This pineapple chicken is a dish that my mom made for me when I was a kid. At the time I didn’t know it wasn’t a traditional Chinese dish. She learnt how to make it from the Chinese takeaway she grew up in and ever since then it has become my childhood favourites!
ingredients:
This recipe serves 2 people!
- 3 chicken thighs, deboned and sliced to bite-sized
- 1 cup of sliced pineapples (canned or fresh)
- 1/2 white onion, chopped
Chicken marinade:
- 1 tbsp light soy sauce
- 1 tbsp pineapple juice (from can)
- 1 clove garlic, minced
- a pinch of white pepper powder
Stir-fry sauce:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1/2 tbsp rice vinegar
- 2 tsp dark soy sauce
- 1 tsp sesame oil
- 5 tbsp pineapple juice (from can)
steps:
- Combine marinade with deboned and sliced chicken thighs. Marinate for at least 20 minutes.
- Heat some neutral oil in a pan, add chopped onions and sauté until fragrant. Then add chicken and stir-fry until cooked and brown.
- Add the sliced pineapples. Stir-fry for another 1-2 minutes. Then add sauce mixture and cook for another around minute until sauce thickens.
- Serve with rice. Enjoy!
