I don’t remember where or when I saw the recipe for gochujang pork belly stir-fry, but since then I’ve been making it all the time during my university days. I would eat it with rice or noodles and always have some sort of vegetable on the side (cuz I’m a health queen ?).
This is one of my “lazy dinner”. All you gotta do is marinate the pork, stir-fry it, boil some noodles/ rice and then you have a quick meal! ?
ingredients:

- 500g pork belly
- 2 serving knife-cut noodles (or any noodle of your choice)
- 1/3 cucumber, thinly sliced
- 1 green onion, chopped (for garnish)
- toasted sesame seeds (for garnish)
pork belly marinade:
- 2 cloves garlic, minced
- 1/2 tsp ginger, minced
- 1 tbsp gochujang (Korean hot pepper paste)
- 1 tbsp honey
- 1 tbsp light soy sauce
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
steps:
- Chop pork belly into thin slices and combine it with the pork marinade. Whilst letting the pork to marinate, you can chop your vegetables and boil noodles/ rice, then set it aside. If you want, you can let the pork marinate longer for more flavour.
- Heat oil on a frying pan and turn to medium heat. Add the pork belly slices and stir-fry for around 4-5 minutes on each side.
- Serve your pork with noodles/ boiled white rice, then top it off with sliced cucumbers, sesame seeds and chopped green onions.
what noodles should I use?
I used knife-cut noodles because I love the texture and it holds the gochujang stir-fry sauce really well. But you can use any noodle you like!
