Cola chicken wings are tender, sweet, savoury, slightly tangy and takes less than 30 minutes to cook! If you’ve never tried this and think that it’s weird to use coca cola as an ingredient for cooking, just trust me on this one. Cola chicken wings is a popular dish in Hong Kong, and it typically mixes cola with soy sauce and sometimes barbecue sauce.
why cola?
When we simmer the cola and chicken, the sauce reduces and thickens, which helps to create a sweet, sticky glaze. The flavour of this sauce has elements of sweet and sour, but also balanced out with the savoury and umami taste of the soy sauce. In addition to that, the acidity of the cola also tenderises the meat, which is why the wings are so soft when you bite into them!
ingredients for making cola chicken wings:
- 12 pieces chicken wings
- 300ml coca cola
- 2 cloves garlic
- 2 slices ginger
- 2 scallions (separate green and white part)
- toasted sesame seeds (optional)
chicken marinade:
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing cooking wine
- ¼ tsp white pepper powder
- a pinch of salt
steps:
- Absorb the moisture from chicken wings with a paper towel.
- Mix and combine with chicken wings with marinade ingredients. Marinate for at least 20 minutes.
- Heat some cooking over on a frying pan. Over high heat, sauté ginger slices for 1-2 mins until golden and aromatic. Then add chicken wings and lightly brown both sides for 2-3 mins per side. Add the garlic and white part of the scallion and sauté for a minute (we sauté them last as we don’t want to it to burn).
- Pour in cola. Bring it to a boil then cover the pan with a lid. Reduce the heat to medium and simmer for around 15 minutes.
- After 15 minutes, remove the lid, turn the heat back to high and stir the wings until the sauce reduces and thickens into a sticky glaze.
- Garnish with white sesame seeds and green scallions. Enjoy with a bowl of hot rice.
tips for cola chicken wings:
- It’s really important to use regular coke and not diet coke, as the sticky glaze of the sauce comes from the sugar in regular coke.
