When you want to have something hot and nourishing, Chinese tomato pork bone soup is the perfect thing to make, as it’s easy to prepare only consists of a few ingredients. All you really need is tomatoes, sweetcorn, carrots, and pork ribs. But if you want to make this vegetarian, you can exclude the pork.
ingredients for making Chinese tomato pork bone soup:
- 600g pork ribs (or sub with chicken drumsticks)
- 4 medium tomatoes
- 1 sweetcorn
- 2 carrots
- 1 scallion (optional)
- 2 tbsp ketchup (optional)
- 1-2 tsp salt (or more to taste)
- 8 cups water (or chicken/ pork stock)
steps:
- Add pork ribs to a pot and cover with water. Bring to a boil, then drain pork through a strainer. Rinse the pork with clean water to remove the scum.
- In a large pot, heat some cooking oil and sauté your scallions and tomatoes to bring out the flavour. Sauté for a few mins until the tomatoes have softened.
- Add water (or stock), pork ribs, corn and carrots. Cover the lid, turn to high heat and bring the soup to a boil.
- Once the soup has boiled, reduce to medium-low heat and simmer for about an hour.
- Lastly, stir in salt to taste and enjoy!
