These cheese mochi balls are something I used to get in all the time in a bakery called A1 Bakery back in Hong Kong. They used to have cheese balls, black sesame balls and chocolate balls.
They’re basically baked chewy bread. This one is similar to pão de queijo, a Brazilian cheese bread, except our main ingredient is glutinous rice flour, which gives a chewy texture just like mochi.
ingredients:
- 100g glutinous rice flour
- 40g tapioca flour
- 25g sugar
- 60g unsalted butter
- 100ml milk (or plant-based milk)
- 1 egg
- 70g shredded cheddar cheese (or any cheese of your choice)
steps:
- Combine glutinous rice flour, tapioca flour and sugar in a mixing bowl, Set aside.
- In a saucepan, heat up butter and milk and bring it to a boil. Let it boil for 1-2 minutes, then immediately pour it into the flour mixture. Mix well. Add one beaten egg and continue mixing until turns into a dough-like texture. Lastly, add shredded cheese and combine well.
- Put the mixture into a piping bag or ziplock bag (cut the corner of the bag to create a hold), and squeeze the mixture into golf ball sized balls, and place them on a baking tray.
- Bake at 200˚C for a total of 12 minutes. After 6 minutes, turn the tray around to bake both sides of the tray evenly. This cheese mocha bread is best enjoyed fresh out the oven.
