Satay beef fried rice is a flavourful dish that combines tender, marinated beef with the rich, nutty aroma of satay sauce. Tossed with perfectly stir-fried rice and a hint of smoky wok hei, this dish brings a delicious balance of savoury, slightly spicy, and aromatic flavours, making it a super comforting dish.
ingredients:
- 230g ribeye steak
- 1-2 servings cooked white rice
- 1/4 cup frozen vegetables
- 1 tbsp satay paste
- 1/2 tbsp dark soy sauce
- 1 egg, beaten
- Chopped green onions
Beef marinade
- 1 tbsp satay paste
- 1/2 tbsp light soy sauce
- 1 tbsp cornstarch + 1/2 tbsp water
- 1 tsp sugar
- 1/4 tsp white pepper powder
steps:
- In a bowl, combine sliced beef with satay paste, light soy sauce, cornstarch with water, sugar, and white pepper powder. Marinate for at least 15 minutes.
- Heat a wok or large pan over high heat. Add the marinated beef and stir-fry until 80% cooked. Set aside.
- In the same wok, add a little oil and pour in the beaten egg. Stir-fry for a few seconds, then add cooked rice. Stir-fry for a couple of minutes until combined.
- Add the frozen vegetables and stir-fry until heated. Then, add the dark soy sauce, a pinch of white pepper, and the satay paste. Stir everything together until evenly coated.
- Combine everything: Return the beef and scrambled egg to the wok. Toss everything together, and cook for another 2-3 minutes until well combined.
- Finish with green onions: Garnish with chopped green onions and serve immediately.
