This recipe is inspired by Bao, a popular restaurant in London known for their steamed buns and Taiwanese dishes.

Their steak butter rice with soy-cured egg yolk is one of their popular items on the menu. Although they serve it with grilled dry-aged rump steak, you can replicate this dish at home with any steak cut. The beef goes so well with the creaminess and umami of the egg yolk along with flavourful, buttery rice.

ingredients to make steak butter rice with soy-cured egg yolk:

  • 225g rump steak
  • 20g butter
  • black pepper
  • salt

for the rice:

steps:

  1. Cure the eggs by immersing the egg yolks in soy sauce and mirin and refrigerate overnight.
  2. Bring steak to room temperature then season with salt and pepper.
  3. Cook your rice.
  4. While waiting for the rice to cook, heat up a pan, add a bit of oil, and sear the steak for 1-2 minutes on each side (adjust cooking time according to the thickness of steak).
  5. Add butter to the pan and baste over the steak for a minute. Remove steak from pan and let it rest for a few minutes.
  6. When rice is done and still hot, loosen the rice with a fork and stir in butter, soy sauce, spring onions, chilli oil and black pepper, and combine well.
  7. Serve by putting the rice into a bowl, sliced steak, top it off with the cured egg yolk and black pepper.

  • 1 egg

  • 60ml light soy sauce

  • 30ml mirin

  • for the steak:
  • 225g rump steak (or any beef cut of your choice)

  • 20g butter

  • black pepper

  • salt

  • 20g butter

  • 1 scallion, finely chopped

  • 1 tsp light soy sauce

  • 1 tsp chilli oil (optional)

  • black pepper

  • salt

Directions

  • Cure the eggs by immersing the egg yolks in soy sauce and mirin and refrigerate overnight.
  • Bring steak to room temperature then season with salt and pepper.
  • Cook your rice.
  • While waiting for the rice to cook, heat up some cooking oil on a pan, and sear the steak for 1-2 minutes on each side (adjust cooking time according to the thickness of steak).
  • Add butter to the pan and baste over the steak for a minute. Remove steak from pan and let it rest for a few minutes.
  • Once your rice is cooked and still hot, loosen the rice with a fork and stir in butter, soy sauce, spring onions, chilli oil and black pepper, and combine well.
  • Serve by putting the rice into a bowl, sliced steak, and top it off with the cured egg yolk and black pepper. Enjoy!

Notes

  • In my recipe video, you can see I added more egg yolks to the marinade only because I wanted to use them for other meals.
