The Hong Kong style French toast is a classic breakfast found in almost all cha chaan teng (茶餐廳, a local Hong Kong cafe). It is typically made with bread layered with peanut butter, coated with egg and evaporated milk, deep-fried until golden brown and crispy, then topped with a knob of butter along with condensed milk, honey or syrup.
However, since we’ll be making this at home, instead of deep-frying (which you can, by all means), you can shallow-fry the toast with an inch layer of oil. Alternatively, you can pan-fry with a knob of butter, if you don’t want to use too much oil.

- Instead of peanut butter, you can use any type of nut butter you prefer. You can also use Nutella, jam, honey, etc.

- Cutting off the bread crusts makes it easier to soak all the edges of the bread with egg wash.
- To check if the oil is hot enough for frying, stick a wooden chopstick/ wooden skewer into the oil. If bubbles appear around the stick, then the oil is ready.
