When you feel like having something cold, light and refreshing– definitely try this cold chicken noodle salad smothered in fragrant, sesame sauce. You can also drizzle some chilli oil/ chilli crisp to give it a bit of a kick.

This is also a pretty light and healthy recipe. You get a good amount of protein from the chicken breast and peanut butter, and your veggies from the crunchy cucumber.

The noodles used here are potato starch noodles, and they have a really chewy texture. If you can’t find them, you can substitute it with rice noodles or glass noodles.

A cold and light side dish is perfect for hot summer days. The crunchy cucumber and refreshing sesame sauce goes well with chewy noodles.

Ingredients

  • 1 chicken breast

  • 1/2 cucumber, julienned

  • 1 serving potato starch noodles (or any noodle you prefer)

  • white sesame seeds (for garnish)

  • sesame sauce:
  • 1/2 tbsp peanut butter

  • 1 1/2 tbsp sesame dressing

  • 1/2 tsp sesame oil

  • 1 tbsp black vinegar

  • 1 tsp light soy sauce

  • 1 tsp sugar

  • 2 tbsp water

  • salt to taste

Directions

  • Season the chicken breast with some salt and steam it for around 9-12 minutes depending on the size. Cool the chicken down with cold water before shredding it to pieces with fingers.
  • Prepare the sesame sauce by combining all the ingredients listed above.
  • Cook your choice of noodle according to the package instructions. Drain and rinse noodles thoroughly under cold water. Mix in a teaspoon of sesame oil to prevent the noodles from sticking together.
  • Assemble the noodles by mixing shredded chicken, noodles, julienned cucumber and sauce, mix everything together and garnish with sesame seeds. Enjoy!
