Ingredients

  • 200g black glutinous rice

  • 1L water

  • 400ml coconut milk

  • 5 tbsp brown sugar (adjust to taste

  • 1/8 tsp salt

  • 1/2 mango

Directions

  • Soak the rice for at least 30 mins in 1L of water.
  • After soaking, pour the water to a pot and add the rice once water has boiled. Simmer over low-medium heat for 30-40 minutes until the rice is soft and chewy. Alternatively, you can pressure cook this for 15 minutes.
  • Add coconut milk, sugar and salt, mix and simmer until it creates a slightly thick consistency.
  • Serve it hot or let it cool and refrigerate for an hour before serving it cold. Add any toppings of your choice. Tapioca pearls and mangoes go really well!
