Drunken Chicken (醉雞)

Drunken chicken is a classic Chinese dish that features tender chicken thighs marinated in a fragrant mixture of Shaoxing wine, soy sauce and spices.

  • 3 chicken thighs
  • 1/3 cup Shaoxing cooking wine (more or less depending on your taste)
  • 300ml water
  • 6 red dates
  • 2 bay leaf 
  • 1 tbsp goji berries 
  • 1 tbsp light soy sauce
  • 1/2 tbsp brown sugar
  • 1 tsp salt
  • 2 tsp chicken powder
  • 1 tsp sesame oil
  • Ginger slices

steps:

  1. Debone the chicken thighs. Using the back of a knife, gently pound the chicken to tenderise it. Season the chicken with some salt and Shaoxing wine. Roll the chicken thighs into logs and wrap each of them in tin foil.
  2. Bring a pot of water to a boil, then reduce to medium heat and simmer the chicken for 10 minutes. Turn off the heat and let the chicken sit in the hot water for an additional 20 minutes. Then dunk the foil-wrapped chicken in ice water to cool down.
  3. In a separate pot, combine water, dates, bay leaf, ginger, soy sauce, chicken powder, brown sugar, and salt. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes. Add goji berries, remove from heat and let it completely cool down.
  4. Once the marinade has cooled, add Shaoxing wine and sesame oil. Stir to combine. Remove the chicken from the foil and submerge into the cooled marinade. Place in fridge and marinate for 24 hours.
  5. Slice the chicken thighs and serve with some marinade liquid, dates and goji berries. Enjoy!

tips:

  1. If you like a stronger alcohol taste, feel free to add more Shaoxing wine.
  2. Make sure the marinade is completely cool before adding the Shaoxing wine and submerging the chicken!
  3. Marinating overnight is really important for the chicken to absorb all the flavours thoroughly.
