Creamy Miso Mushroom Pasta with Steak

Italians, look away…… Because we’re about to make an Asian-inspired fusion pasta– creamy miso mushroom pasta with steak!

This creamy, saucy pasta dish is packed with umami from the miso paste and sautéed mushrooms. Pair this with pan fried ribeye steak and you’ll have yourself a delicious, filling meal.

The best part about this recipe is that it requires very little preparation and can be done in less than 30 minutes!

ingredients for making a creamy miso mushroom pasta with steak:

  • 1 ribeye steak (optional; or choose whatever cut of beef you prefer)
  • 150g pasta (any you like)
  • 2 cups mushrooms, sliced
  • 1/2 white onion, diced
  • 2 cloves garlic, thinly sliced
  • 1 cup parmesan cheese, grated
  • 1/2 cup heavy cream
  • 2 tbsp miso paste
  • 2 tbsp butter
  • Salt
  • Pepper

why use miso?

  • Miso is a thick paste made from fermented soybeans. It is a traditional Japanese seasoning used to add salty umami flavour to many everyday Japanese dishes.
  • Miso has a deep savoury and toasty flavour, slightly tangy and sweet. This pairs really well with the richness of the heavy cream and parmesan cheese.

ingredient substitutes:

  • Miso paste – I used white miso for this recipe, which can be found in most Asian supermarkets. You can use any type of miso you like, but keep in mind that different types of miso would have slightly different flavour profile. For instance, red miso would be saltier and more pungent compared to white miso.
  • Mushrooms – Here I used chestnut mushrooms. But you can also use shiitake, shimeji, oyster, portobello or porcini mushrooms.
  • Pasta – I used paccheri pasta only because I happen to have them in my cupboard. You can use any pasta you want, but long and white pastas such as fettuccine, tagliatelle, pappardelle, or linguine would be suitable as it holds the sauce well.

steps:

  1. Prepare your ingredients by chopping mushrooms, onion and garlic. Season your steak with salt and pepper on both sides.
  2. Add a generous pinch of salt to a pot of boiling water and boil your pasta according to package instructions (minus 1-2 minutes) until the pasta is al dente.
  3. Heat 1 tbsp of oil to a hot pan and add your steak. On high heat, sear each side of the steak for 2-3 minutes for medium-rare, or until it has reached your desired level of doneness. Remove the steak and set aside.
  4. On medium heat, melt some butter in the pan and add mushrooms, onion and garlic. Cook until everything has softened.
  5. Add heavy cream, miso paste and about 1/3 cup of reserved pasta water. Make sure the miso paste has dissolved and mixed well in the sauce.
  6. Add the pasta to the pan and coat the pasta well with the mushroom cream sauce.
  7. Slice the steak and serve on top of the pasta. Grate some more cheese or black pepper on top. Enjoy!

tips:

  1. As mushrooms shrink a lot in size when you cook them, slice them around 1cm thick so that you can still retain the texture.
  2. If you have brown bits stuck to the pan after frying the steak, you can deglaze your pan with some cooking wine or white wine vinegar whilst the pan is still hot, then scrape off the brown or burnt residue.
