The spicy slinky cucumber salad is a great way to turn your regular cucumber salad into a fun side dish! Chopping the cucumbers into slinky caterpillars is not only a more enjoyable way to consume your veggies, but the shape gives the cucumbers more surface area to absorb all the delicious sauce. It’s a win-win.
ingredients to make spicy slinky cucumber salad:
- 6 baby cucumbers
- 2 tbsp rice vinegar
- 1 tbsp chilli crisp
- 1 tbsp light soy sauce
- ½ tbsp gochugaru (Korean chilli flakes)
- ½ tbsp sesame oil
- 1 tsp sugar
- 1 tsp minced garlic
- toasted white sesame seeds to garnish
- 1 tsp salt
- water
steps:
- Wash the cucumbers. Chop off the ends of a cucumber and place the cucumber between a pair of chopsticks. With a knife, cut thin perpendicular lines.
- Turn the cucumber over and cut thin diagonal lines. Repeat for the rest of the cucumbers.
- Put the cucumbers in a bowl and add some salt to dehydrate the cucumbers (drawing out the moisture makes the cucumbers extra crunchy). After about 10 minutes, rinse them with water.
- Add the sauces and seasonings to the cucumbers and mix thoroughly until well combined.
- Put the cucumbers in the fridge and let it marinate for at least half an hour before serving. Enjoy!
